21 Day Fix Approved French Toast Pancakes

This week begins tax school. Which means twice a week, I will be teaching a bilingual tax course to prepare for next tax season. I really enjoy it, but it can be tricky trying to eat healthy during this time. I remember last year Taco Bell and Hardee's were my "go-to" dinner choices. Fast forward to this year and I'll be having my shakeology for dinner each evening that I teach. It's easy, quick and keeps me full throughout the class. 

So because of this, I am not having my usual shakeology for breakfast.  This morning, I wanted something other than eggs so I looked for a fix approved pancake. 

Now I've made the low carb pancakes that are only made with banana and egg and they were YUCK! (Just being honest)

I was hestitant with these but I hand everything at the house already so there was nothing to loose if they didn't taste good. 

They have the consistency of French toast with the look and feel of pancakes. I was full until lunch time. Getting 2 reds in for breakfast really helps me not feel so deprived during the day. 


French Toast Pancakes

-1/3 cup cottage cheese
-1/3 cup rolled oats
-2 egg whites
-stevia
-1/4 tsp vanilla extract
-1/2 tsp cinnamon

Put all ingredients in bowl and blend with immersion blender (you could also use a food processor or blender). This will make for a smooth batter (I was not about to make pancakes with chunky cottage cheese!)

Then, pour onto pan or griddle and cook until small bubbles appear through pancakes. Flip and cook through. 


For the sauce, I used a tbsp of PB2 and a Tsp of honey with about a tbsp of water. Mixed it all together and poured over pancakes. 


They were soooo good!!!  I count them as 1 1/2 reds, 1 yellow and 2 tsp.

Creating Momentum: Day 1 of the 3 Day Quick Fix

So here goes nothing. Yesterday I prepped everything that I'll be eating for the next three days!  It was exciting. And nerve-wrecking all at the same time. I didn't like that I indulged yesterday more than normal just because I knew I would have those things for THREE DAYS!  Really Nicole, come on!!  I know I still have a LOT of mental work to do to help me get to where I want to be. That's why I'm trying out the three day quick fix to see how my body reacts to it and how I mentally handle being on a restrictive diet. During a competition prep, there can be cheat meals and other foods added in to your regime;  however for the 3 Day Quick Fix, protein and veggies rule.  I will be making one modification to the plan because I can't go three days without Shakeology. One of the biggest questions that people have when wanting to get healthy, loose weight or change their lifestyle is normally:: where do I start?? Some like to go cold turkey with a lifestyle change.
