She Ate What??

Paleo, clean eating, raw vegan, grass-fed, no hormones, etc. : We all see the up and coming new philosophies of eating healthy and along with that, you'll see some pretty crazy combinations too. 

Today was perusing Pinterest (the death trap of the mind and time), I saw "Chia Pudding?!" What??  I haven't had pudding in FOREVER and now it's a "healthy" thing?!
I remembered my boss had mentioned something to me about it a few weeks ago, so I figured I'd check out the recipe and see just how crazy it was. 

Well call ME CRAZY because I had all of the ingredients on hand. I mixed it up and a couple hours later, I tried it. It was REALLY GOOD! It will definitely be added to my clean treats!!

Here's the recipe::

Chocolate Peanut Butter Chia Pudding

3/4 cup Almond/Coconut milk (you can use your milk of choice here)
3-4 tbsp of chia seeds (I recommend 3 until you decide that you want it thicker)
1 tsp vanilla extract
1 tbsp PB2 (if using natural nut butter: 1-2 tsp)
1-2 tbsp cocoa
Stevia or honey to taste

Whisk everything together and put in a airtight Tupperware or mason jar. Allow it to sit for at least 2-3 hours. The longer it sits the thicker it will be. 

It was very rich so even though this could be just a serving, I would portion it out into 4 servings for me. 

For the entire serving::
261 Calories

26 Carbs
19 Fiber
10 Protein

For 1/4 Serving
68 Calories
5 Fat
9 Carbs
5 Fiber
3 Protein

  2. That's great Eva! I'm not completely Paleo but I do go in that direction when it comes to desserts. I have a crazy sweet tooth.
    I really like using coconut cream (just put a can in the fridge for 6-8 hrs) for whipped topping! Just mix with some vanilla and cinnamon and top fruit and nuts.
    For dinners, utilize the slow cooker, especially since it's getting cold already! It maximizes flavor and you are able to make one meal that aligns with your eating goals.

Happy 3rd Blog-aversary!!

It's been three (3) years to the day since I began blogging.  I've taken a LONG break lately as I have had many transitions in my life.  But in the past few weeks, I've been considering sharing more about the next stage of this journey called life with you all. The Summit...Would You Start Over?

So as most of you know, I went to Nashville last month for Beachbody's national convention called Summit.  It is the most amazing event where people who's purpose is to help others get together, share wonderful ideas/trainings and completely refill your cup before you go back home. This year one of the speakers was talking about completing a workout program in it's entirety when we returned home.  And they were telling us not to start over if we hit some bumps in the road.  Now, I for one, am a habitual "starter over" so I probably turned a little red (those who know me know how a can get flushed in a split second).  In a room of about 14k people, I was feeling like they were talking right to me. Creating Momentum: Day 1 of the 3 Day Quick Fix

So here goes nothing. Yesterday I prepped everything that I'll be eating for the next three days!  It was exciting. And nerve-wrecking all at the same time. I didn't like that I indulged yesterday more than normal just because I knew I would have those things for THREE DAYS!  Really Nicole, come on!!  I know I still have a LOT of mental work to do to help me get to where I want to be. That's why I'm trying out the three day quick fix to see how my body reacts to it and how I mentally handle being on a restrictive diet. During a competition prep, there can be cheat meals and other foods added in to your regime;  however for the 3 Day Quick Fix, protein and veggies rule.  I will be making one modification to the plan because I can't go three days without Shakeology.
