When The Scale Goes Up...

Yep, it happened!!  The scale went up on me over the weekend (totally the scales fault, right?!). I gained a lb back from the four that I lost last week in my 3 day quick fix attempt. 
So what do I do now? Now I know what you may be thinking; "a pound? Really Nicole, a pound? Who cares!"
But it's  just one pound here and there that can grow to be a 10 lb weight gain in just three months. I don't want to go back there and, as you all now know, I have really big goals for next year. 
I want/ need to stay on track so that I can accomplish those goals in the future. 

So here's my plan:
I am starting a 21 Day Fix (because it's awesome!) and PiYo hybrid program (because it's awesome too, on sale, and everybody's doing it, ha!). 
I missed yesterday because a sick little one who, every time I tried to get out of bed, woke up from a deep sleep and asked, "what are you doing mommy?" Or "where are you going?" A nap time workout didn't pan out either and I ended up washing my hair in the sink trying to get ready for work. Oh what a glamorous life :)
I will also continue drinking a gallon of water a day. I did finish my gallon each day over the weekend, but I ate too much junk!!
My nutrition is made easy with the Fix portion controlled containers, but my diet (as in what I eat) is always the hardest because I haven't fully conquered this mind yet!  It's a daily struggle and I try to focus on small victories in order to build up my confidence to conquer bigger battles with my mind.

Happy 3rd Blog-aversary!!

It's been three (3) years to the day since I began blogging.  I've taken a LONG break lately as I have had many transitions in my life.  But in the past few weeks, I've been considering sharing more about the next stage of this journey called life with you all. 21 Day Fix Approved French Toast Pancakes

This week begins tax school. Which means twice a week, I will be teaching a bilingual tax course to prepare for next tax season. I really enjoy it, but it can be tricky trying to eat healthy during this time. I remember last year Taco Bell and Hardee's were my "go-to" dinner choices. Fast forward to this year and I'll be having my shakeology for dinner each evening that I teach. It's easy, quick and keeps me full throughout the class.  So because of this, I am not having my usual shakeology for breakfast.  This morning, I wanted something other than eggs so I looked for a fix approved pancake.  Now I've made the low carb pancakes that are only made with banana and egg and they were YUCK! (Just being honest) I was hestitant with these but I hand everything at the house already so there was nothing to loose if they didn't taste good.  They have the consistency of French toast with the look and feel of pancakes. The Summit...Would You Start Over?

So as most of you know, I went to Nashville last month for Beachbody's national convention called Summit.  It is the most amazing event where people who's purpose is to help others get together, share wonderful ideas/trainings and completely refill your cup before you go back home. This year one of the speakers was talking about completing a workout program in it's entirety when we returned home.  And they were telling us not to start over if we hit some bumps in the road.  Now, I for one, am a habitual "starter over" so I probably turned a little red (those who know me know how a can get flushed in a split second).  In a room of about 14k people, I was feeling like they were talking right to me. But then the best example was given...when you begin a hike/climb up a mountain, if you didn't like how fast you went or your progress in the first few hours, would you start over???
