"Refreshing" Dinners

...See what I did there?..."Refreshing"

I digress; alright, so I told ya'll that I would be sharing some of my cleanse dinners.  They are SUPER simple and easy.  Perfect for any weather in any season.  If you are in a hurry, these are great clean "go-to" meals that can be ready in 15-20 minutes.

First up, 

Steamed Coconut Veggies!


- 1/2 cup cauliflower
- 1/2 cup broccoli
- 4-5 baby carrots
- 1/2 cup water
- 1/2 tbsp coconut oil
- fresh herbs of your choosing (I used a dry herb salt-free mixture)

Steam all veggies for about 5 minutes.  While steaming veggies, warm 1 cup of organic vegetable broth on the stove or in the microwave.  Once veggies are tender yet crunchy, pour the warm vegetable broth over the veggies.

Pair this with the Vanilla Refresh Shake or Shakeo.

If not on the cleanse, you can pair with quinoa or a baked sweet potato with coconut oil and organic cinnamon. 





Next up, 

Roasted Asparagus with Slivered Almonds






- 8-10 spears of asparagus
- 1 tsp olive or coconut oil
- 1 tbsp of slivered almonds

I had this meal twice on the Refresh.  The first time was much better than the second (I cooked the asparagus too long).  The first time, I put the asparagus in the toaster oven and let them go on 400ish for about 10 minutes.  They were hot and crunchy, loved them!!  I chopped up a tablespoon of raw almonds because that's what I had on hand; and, as a busy mom, you get resourceful!  The almonds gave the asparagus such a richness.  It was sooo good!!  This night, I warmed the organic vegetable broth and had it separately.

This meal would pair nicely with a white fish or lean steak.  For another side, mashed cauliflower or baked sweet potato too.  mmmmm!!!!

Happy 3rd Blog-aversary!!

It's been three (3) years to the day since I began blogging.  I've taken a LONG break lately as I have had many transitions in my life.  But in the past few weeks, I've been considering sharing more about the next stage of this journey called life with you all. In three short years, I have gone from motivating others to experiencing weight gain and depression.  Being delivered from said depression and fighting to lose the weight.  I'd say sometimes in life, motivation shows up in the difficult times and then sometimes it's no where to be found-- a bit of a roller coaster really. And about a year ago, I was tired.  Tired of not getting enough sleep, tired of the structure and I needed a break.  This break cost me about 20 lbs and goodness has it been tough to get my mind right again.  But I'm experiencing life!!  Enjoying the moment!  And making memories with my family and friends that have been so good for my soul. Monday MOMENTUM:: Where should you start??

One of the biggest questions that people have when wanting to get healthy, loose weight or change their lifestyle is normally:: where do I start?? Some like to go cold turkey with a lifestyle change. And sometimes people can keep this up while others will fall back into the same old habits with little chance of recovering.  One thing that I have tried to stick with this year that has been different than my weightloss journey in the past is making small changes. Small changes will add up and before you know it, your lifestyle will be rapidly changing.  This year, it was when I really felt GOOD inside, that I wanted to consistently change my lifestyle. In the beginning, it really is like a detox!!  Think about how much processed food(like) junk you are consuming!!!  You wouldn't put maple syrup in a car and expect it to work like gasoline?!!!  It's  the same thing with our bodies. They weren't/aren't made to be given tons of chemicals that look like food....
